Tucked into the heart of Dayton since 1930, our bakery isn’t just a place where pies are made—it’s where tradition rises, stories are shared, and the day starts long before the sun peeks over the horizon.
So, what’s it like to spend a day in the flour-dusted shoes of our Head Mehaffies Pie Baker? Let’s take a peek inside the kitchen, where every swirl of dough and flick of a wrist is part of a delicious Dayton, Ohio legacy.
11:00 PM – Ovens On, Aprons Tied
While most of the world is winding down, our head baker Mark—who’s been with Mehaffies for an incredible 39 years—is just getting started. As the lights flicker on and the ovens begin their early morning hum, Mark is already hard at work mixing our signature homemade fillings and preparing to bake the pies that have made us a Dayton favorite for generations.
There's a rhythm to it—a practiced, peaceful kind of hustle. Ingredients are measured with the same care as they were when the first batch was made and passed down through generations.

1:00 AM – The Art of the Crust
A Mehaffies pie crust isn’t just a base—it’s the foundation of joy. Flaky, tender, and perfectly golden, each crust is prepared with precision and passion. Watching the baker’s hands move across the dough is like watching a pianist play a familiar favorite—swift, graceful, and with love.
Each crust is hand-pressed into pans, ready to hold the stars of the show: our fillings.
3:00 AM – Filling with Flavor
From tart cherry to silky chocolate, sweet peach to creamy lemon meringue, our fillings are made fresh daily using time-honored recipes that taste just like home.
Now it’s time for all hands on deck—our entire Mehaffies team gathers around the pie machine to hand-press each shell and carefully add the fillings. Fruit is gently folded into glazes, cheesecakes are smoothed with care, and every step is a shared labor of love that brings generations of flavor to your table.
If you’re lucky enough to step into the kitchen during this time, the rich aroma of fresh fillings and pie dough greets you—and in an instant, you’re transported to Sunday lunch at Grandma’s table.

4:00 AM – Into the Ovens They Go
As pies line up like little soldiers of sweetness, our ovens take center stage. In the video clip, you’ll see the rotating trays glide in circles in the cavernous ovens. The heat hums. The aroma? Irresistible.

8:00 AM – Ready for You
By the time the first customers walk through the door at 8:00 AM, the display case is brimming with golden pies, decadent cheesecakes, cookies, and cakes made specifically for that day. Mark is still moving—finishing up special orders and preparing for the next day of baking.
Some customers are regulars. Some are just discovering us for the first time. But all are welcomed with warmth, stories, and the comforting promise that no matter what’s happening out there—inside, there’s always pie.
